It starts out the same as any other paddy, but instead of polishing away the bran completely, only a light milling is done. This leaves the color and much of the grain’s natural texture intact.
Because the bran stays on, the grain takes a little longer to cook and holds its shape well once done. It works well in everyday meals, salads, and dishes where a firmer, nuttier grain is preferred over soft white rice.
